Denomination: Veronese IGT
Grapes: Corvina Veronese 40%, Corvinone 30%, Rondinella 25%, Sangiovese 5%
This wine, produced with a particular RIPASSO technique, has a good structure, soft texture and persistent finish. Deep ruby red in color, it has a pleasant scent of wild berries with hints of raisins. The grapes from which it comes, Corvina Veronese, Rondinella and Sangiovese del Podere Palazzo della Torre, follow two different paths: while 70% is vinified at harvest, 30% is left to dry until the end of December. Only at this point does the path rejoin: the dried grapes are pressed and refermented together with the previously produced wine.
It can age for 8-10 years.
Palazzo della Torre is particularly suitable to accompany the wide range of risottos (excellent with that of beaten pork), various meat dishes especially grilled, roasts and traditional boiled carts. It is recommended to serve at a temperature of 16-18 C and uncork one hour before consumption.
